I have your cookbook Cooking with
Kurma. Congratulations! What a fabulous book. I wanted to make
the Macadamia and Blueberry Muffins but noticed one of the
ingredients you list is 'self-raising flour'. I don't know what
that is, and after asking around I have figured that it is not available
in the United States. What can I do? I really want to cook those
muffins!

for the letter Julie. Your point is valid; self-raising flour is
not available in the USA, nor in most of Europe. It is a British,
Australian and New Zealand tradition, and maybe it is available
in South Africa and Canada.
Any recipe in my books that call for it can easily be adjusted
as follows:
To make your own self-raising flour, combine 1 cup/4oz/100g
soft, all purpose, plain flour with 1 teaspoon baking powder and
1/8 teaspoon bicarbonate of soda.
It's that simple!
So for the muffins recipe you are refering to, replace the 2 cups
self-raising flour with:
2 cups soft all-purpose plain flour
2 teaspoons baking powder
1/4 teaspoon bicarbonate of soda
